Upselling is getting a customer to purchase something that helps drive your sales and profit.
Suggestive selling is getting your customers to try new and exciting things that they may not purchase on a regular basis.
Upsell when you can!
When a customer asks for a medium cone, there is no harm in suggesting an upgrade to a large for a dollar more. Have your employees push the higher price items, but make sure the customer likes the product.
Employees Are Key
Try to promote products unique to your store, that separate you from the competition.

Both techniques are commonly used everyday by the most successful food serving establishments across the globe and these sales techniques are something you can implement into your own frozen dessert or ice cream shop to drive higher profits.
When it comes to using these techniques it's critical to understand that your employees will play a vital role here. Make sure your employees are properly trained to interact with the customers and carry a positive attitude. The employees should be masters of the products and know the menu so they know which products to push and suggest.
