Scooping Hand Dipped Ice Cream

When scooping ice cream, you need to make sure your portions are accurate in size. You can do this by making sure you are using the same type of scoop every time as well as following the clock method. The clock method is scooping around the outside of the tub in a clockwise motion. This allows for equal scooping opportunity every single time. This way you know your portions are accurate and equal. Don’t zig-zag across your tub, this leads to unequal portions of the product and a not-so-nice-looking tub of product. Not only do we want to use the clockwise method for portion accuracy but also for the aesthetic of a nicer-looking tub.
